Pork taco salad

A friend of ours gave us this recipe for a pork taco salad. It tastes just like the one served by Cafe Rio. It’s now one of our favorite dishes. True there are a lot of ingredients, but it’s well worth the effort.

Cafe Rio Pork Taco Salad

Pork

4 pound pork roast
4 8 ounce cans tomato sauce
3 teaspoons pressed garlic
3 cups brown sugar
4 teaspoons cumin
4 cups Dr. Pepper
4 tablespoons molasses
1 teaspoon salt
pepper to taste

Combine all ingredients in slow cooker or crock-pot, cover and cook for 10 hours on low or 5 hours on high. Baste as needed. When pork is cooked, remove and shred with forks to serve. Add back in some juice for extra flavor on pork and salad to liking.

Lime Rice

2 tablespoons butter
1 ¼ cups rice
2 ¼ cups chicken broth
¾ teaspoon salt
¼ teaspoon pepper
Juice and zest of 1 large or 2 small limes
2 tablespoons finely chopped cilantro
¼ teaspoon cumin

In cooking pot, melt butter with rice, then add liquid and other ingredients. Bring to boil, reduce heat, cover and cook for 20 minutes.

We use the Pampered Chef microwave rice cooker. You just drop all the ingredients in the bowl, cover and cook the rice as directed by Pampered Chef (5 minutes on high, 15 minutes on 50%). Works like a charm.

Creamy Cilantro Dressing

1 8 ounce can of green salsa
1 package buttermilk ranch dressing (dry)
½ cup sour cream
½ cup low fat mayonnaise
½ cup buttermilk
1 cup fresh cilantro
2 cloves pressed garlic
¼ teaspoon cayenne pepper
½ teaspoon salt
2 tablespoons fresh lime juice
½ teaspoon cumin
½ cup sugar
a few drops of Tabasco sauce (to liking)

Blend all together in blender until smooth and creamy.

Other Basic Taco Salad Ingredients

Chopped lettuce
Black beans
Pico de gallo/salsa
Guacamole
Shredded cheese
Tortilla chips
Cilantro
Limes
