Great Harvest pumpkin chocolate chip bread

I’ve blogged about this before: our family has a fetish for Great Harvest products. They’re whole grain goodness is just too irresistible.

My cousin, Lisa, recently tried a recipe that comes awfully close to my daughter’s favorite bread, Great Harvest’s pumpkin chocolate chip bread.

So, for those of you willing to give it a try, here’s the recipe:

Pumpkin Zucchini Bread

3 eggs, lightly beaten
2 cups sugar
1 cup canned pumpkin
½ cup butter, melted
½ cup applesauce
1 tablespoon vanilla extract
2 cups flour
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon ground cloves
1 cup shredded zucchini
1 cup chocolate chips (or nuts)

Combine eggs and sugar. Add pumpkin, butter, applesauce and vanilla. Combine dry ingredients, gradually add to pumpkin mixture and mix well. Stir in zucchini and chocolate chips/nuts. Pour into two greased and floured loaf pans.

Bake at 350° for 45 to 50 minutes.
