Homemade Oreo-type cookie

I have a new favorite cookie. Many thanks to our friend, Ellen Gianni Nelson, for introducing me to my new epicurean delight.

In fact, I love this recipe so much that I’m going to post it. I don’t normally engage in online recipe activities, but for anyone who likes the taste of Oreos, and the texture of a soft cookie, this recipe is for you.

Cookie Ingredients:

1 package Duncan Hines Devil’s food cake mix
2 eggs
1/3 cup vegetable oil

Directions:

Mix the ingredients. Shape into small balls (they can be as small or big as you’d like the cookies to be). Bake at 350° for 10 minutes (a bit longer for larger cookies).

Filling Ingredients:

3 ounces cream cheese
1 tablespoon milk
1 teaspoon vanilla
3 cups powdered sugar

Directions:

Mix the ingredients. Spread on the bottom of one cooled cookie and place another cookie on top to create a cookie sandwich with the filling in the middle (you know what Oreos look like).
