Reese’s Peanut Butter Cookies

One of our family’s favorite cookie recipes is a peanut butter cookie with a Reese’s peanut butter cup in the middle. If you like chocolate and peanut butter, you’ll love these cookies.

Ingredients

½ cup butter at room temperature
½ cup chunky peanut butter
½ cup sugar
½ cup packed brown sugar
1 egg
1 teaspoon Mexican vanilla
1 ¼ cups flour
1 teaspoon cornstarch
½ teaspoon baking soda
½ teaspoon baking powder

sugar (to roll dough in before baking)

unwrapped peanut butter cups (large or small; 1 for each cookie)

Directions

Heat oven to 365ºF.

In a mixing bowl, beat together the butter and sugars, then add the egg and vanilla. Mix in the peanut butter.

Mix all the dry ingredients, then add them to the wet mixture until thoroughly combined.

Shape dough into 2-inch balls. We use the Pampered Chef medium scoop. Roll in sugar. Place a couple of inches apart on an un-greased cookie sheet. We use a Pampered Chef baking stone.

Bake in a 365º oven for 9 minutes or until the cookies are just starting to be lightly browned.

Remove from oven, and with cookies still on the cookie sheet, place unwrapped peanut butter cups in the center of the cookies, pushing down firmly.

After 3-4 minutes, remove the cookies to cool on a wire rack.

Once the chocolate of the peanut butter cup has melted (~5 minutes), if you want, you can use a toothpick to smooth out the jagged edges of the peanut butter cup chocolate.

Makes a little more than a dozen, depending on how large you make the cookies.

    If you don't want to go through the trouble of smoothing out the jagged edges on the peanut butter cup, you can just push it into the cookie upside down so the jagged edges go in first and automatically melt into the cookie.
    This is definately a little peice heaven! 🙂
