Mexican Lime Chicken in the Instant Pot
This is one of our new favorite recipes for lime chicken. We cook the chicken in an Instant Pot, then shred and use it in tacos, nachos, enchiladas or quesadillas. It’s delicious.
Lime Chicken Ingredients
2 pounds raw, skinless, boneless chicken breast meat
½ cup chicken broth
⅛ cup red wine vinegar (can substitute apple cider vinegar)
2 tablespoons butter
2 green onions, chopped
2 cloves garlic, minced
2 tablespoons cilantro, chopped
zest of 1 lime
1 lime, juiced
1 teaspoon white sugar
1 teaspoon seasoned salt
1 teaspoon ground black pepper
1 teaspoon dried oregano
1 teaspoon taco seasoning
½ teaspoon cumin
Directions
Add liquid, butter and seasonings to the Instant Pot; stir.
Add chicken, cut into chunks (about half the size of your fist).
Set on the poultry setting and adjust the time to 15 minutes (or set manually for 15 minutes).
Release the pressure. Remove the chicken and shred it with a fork.
Combine the chicken with the liquid from the pot and serve it in your favorite Mexican meal with all the fixings.
